Newcomer: Isle of Harris Distillery bringt The Hearach Oloroso Cask ...

Ziemlich genau ein Jahr nach ihrer Premiere in Form des The Hearach Single Malts bringt die Isle of Harris Distillery ihre zweite Kernqualität: den The Hearach Oloroso Cask Matured. Wie der Name bereits andeutet, versieht die Brennerei auf der schottischen Insel Harris diesen Single Malt Scotch Whisky mit einer Vollreifung in First-Fill-Oloroso-Sherry-Butts. In gewohnter Manier bildet die Basis leicht getorftes Malz schottischer Gerste – der Phenolgehalt liegt zwischen zwölf und 15 ppm. Fermentiert wird unterschiedlich lang. 40 Prozent des späteren Single Malts weisen eine Fermentationszeit von 70 Stunden, die verbleibenden 60 Prozent eine von 120 Stunden auf. Destilliert wird klassisch zweifach. Die First-Fill-Oloroso-Sherry-Butts, in denen die Reifung über eine unbekannte Zeitspanne vonstatten geht, stammen von der Bodega José y Miguel Martín in Jerez de la Frontera. Abgefüllt wird mit einem Alkoholvolumen von 46 Prozent, ohne Kältefiltration und ohne Farbstoff. Die Batchgröße beträgt 12.000 Flaschen à 0,7 Liter.

Harrison Wood, Assistant Blender der Isle of Harris Distillery, über die Tasting-Notes: „Initial winter aromas of cinnamon, orange peel, and cloves which remind me of Christmas at home. There are green notes of herbs and the nostalgic creaminess of white chocolate from childhood days. When sipped, I can taste walnuts and fireside wood smoke. The dram develops with a hint of thyme from my kitchen, closely followed by dried oranges. Spices then come through, like vanilla pods and a subtle sense of cloves, before a long leather and liquorice finish.“
